The Mai Tai

I was thinking about making Mai Tais without any ready made mixes. There are alot of recipes with minor variations. Make sure you can taste the rum and not just fruit juices.

This one is from the bar at the Royal Hawaiian Hotel in Waikiki.

•1 oz. Dark Rum

•1 oz Light Rum

•1 oz Orange Curacao

•2 oz Orange Juice

•1/2 oz Lime Juice

•Dash Orgeat

•Dash Simple syrup (bar syrup)

Trader Vic's Mai Tai Ingredients:

2 ounces Jamaican Rum

1/2 ounce Orgeat Syrup

1/2 ounce Curacao or Triple Sec

1/4 ounce Sugar Syrup

Juice from one lime

Most call for Rock Candy Syrup or Sugar Syrup. Make your own.
To make simple syrup for beverages:
Bring 2 cups of plain cold tap water to a boil. Stir in 2 cups of plain granulated sugar. Turn the heat to low and stir constantly until the sugar dissolves completely.
