The Mai Tai

I was thinking about making Mai Tais without any

ready made mixes. There are alot of recipes with minor variations. Make sure you can taste the rum and not just fruit juices.

This one is from the bar at the Royal Hawaiian Hotel in Waikiki.

•1 oz. Dark Rum

•1 oz Light Rum

•1 oz Orange Curacao

•2 oz Orange Juice

•1/2 oz Lime Juice

•Dash Orgeat

•Dash Simple syrup (bar syrup)

Trader Vic's Mai Tai Ingredients:

2 ounces Jamaican Rum

1/2 ounce Orgeat Syrup

1/2 ounce Curacao or Triple Sec

1/4 ounce Sugar Syrup

Juice from one lime

Most call for Rock Candy Syrup or Sugar Syrup. Make your own.

To make simple syrup for beverages:

Bring 2 cups of plain cold tap water to a boil. Stir in 2 cups of plain granulated sugar. Turn the heat to low and stir constantly until the sugar dissolves completely.

Rum

A good rum that will put the wammy on you with 63% alcohol. This one is for seasoned pros only.

Cuba Libre

I decided to purchase some Appleton Estate Jamaican White Rum and went with a Cuba Libre. Add some lime peel in the drink for aesthetics.

2 ounces Rum (White)

1 ounce Lime Juice

5 ounces Cola

Put lime juice and a twist of lime into highball glass. Add rum and fill with cola.

Plan on getting a cigar this weekend. Sitting on the patio now that the cold snap is over with. The damn feral cats are in heat and I will be on hose duty. Got my shaker ready. I think I need to restock the vermouth.

I perfer the vodka martini. Gin usually makes me gassy and bloated. I guess I have never really tried to get the taste of it.

1 1/2 oz vodka

1 1/2 oz dry vermouth

Shake vodka and vermouth together with several ice cubes lightly in a shaker. Strain into a cocktail glass, garnish with an olive and serve.
